This de Buyer frying pan is an ideal pan for preparing the perfect dishes. The pan is made of sheet steel, which heats up quickly and tolerates high temperatures. De Buyer Pans contain a high carbon content. This allows the pans to last a lifetime, provided you take good care of them. Before using a de Buyer steel pan can be used, you must first sear it to create a non-stick layer. To sear the pan you need an oil, however, olive oil does not work well, it cannot handle high temperatures. Put the pan on the stove and heat it on low heat. Pour a generous layer of oil into the pan and let it get well hot. Then rub the oil with a paper towel all over the pan, including the edges. Let the pan cool and wipe away the excess oil. Now your de Buyer pan is ready to use!
